Chicken Alfredo Pasta
- 2 large Chicken Breasts
- 1 tsp dried Basil
- 2-3 Tbsp Olive oil
- 12-16 ounces your favorite pasta
- 1 stick of Butter
- 2 cups of heavy cream or 1 cup of heavy cream and 1 oz block of cream cheese
- 1 cup of grated parmesan cheese(I use a microplane to grate mine)*
- Salt and Pepper
Instructions –
Bring a large pot of water to boil and cook your pasta according to the package directions.
Meanwhile cube chicken breasts and heat a few tablespoons of olive oil in large skillet on medium high. Place chicken into heated skillet and cook chicken pieces flipping every few minutes until no longer pink and cooked through. After chicken is cooked, drain off excess liquid in the pan. Season chicken with salt pepper and a sprinkling of dried basil. Melt butter in pan with chicken and then add in the cream and cream cheese if using.
Bring to a low simmer and cook for about 5 minutes until the mixture has thickened slightly, stir in freshly grated parmesan cheese. and additional salt and pepper if needed. When pasta in done cooking, drain off all the water and add back into the pot. Pour chicken and sauce mixture over the pasta and stir till all the pasta is coated. Garnish with more parmesan cheese and fresh chopped parsley if desired and serve immediately.
*Note – This is not the powdered parmesan cheese you find on the grocery store shelves. Blocks of parmesan cheese often come in a triangle shape and can be found with the other blocks of cheese in the refrigerated section in your grocery store. It can also be found with the bagged grated cheese but grating it yourself tastes so much better.

My first experience making alfredo was as a teenager when I was babysitting for a local family. The mom taught me to make it and she used cream cheese in hers. It’s traditionally made just with butter, heavy cream and parmesan cheese. I remember being distracted making it while trying to watch the kids and I forgot to put the parmesan cheese in it haha! The mom said, “It’s good but it tastes different” and I realized what I had done. We just added it on top and it still turned out fine. Sometimes I make it just with the cream and sometimes I add in cream cheese just depending on the ingredients I have on hand.
Alfredo sauce is one of the easiest sauces to make and is so delicious. It’s a favorite here at our house. some of the kids even ask for it for their birthday dinner. This recipe is adaptable to different diets. If you’re gluten free you can use a gluten free pasta of if you’re eating low carb you can eat the sauce by itself or over some low carb veggies such as broccoli or cauliflower. One of my kids doesn’t care for the texture of pasta so he eats the chicken and sauce over a piece of bread.
